healthy lockdown baking!!

Hi, all welcome back to my blog I hope everyone is staying safe and doing well, As you can tell from the title iv been busy in the kitchen it’s one of the things iv been doing to keep my mind occupied in this lockdown cooking and baking is really relaxing for me. with gyms closed and the restrictions I really wanted to keep all my baking as clean and healthy as possible, I have been doing a sugar-free January instead of dry January as I don’t drink and iv decided to do sugar-free February as well. Iv found so many yummy recipes that are gluten-free & sugar-free for this little lockdown baking series I want to do I hope you enjoy it and try it.

This recipe is for apple &cinnamon muffins there sugar-free & gluten-free, it’s a simple-to-follow recipe, I also have youtube tutorial videos for this recipe on my youtube channel ill leave that link below so please check that out too.

All You Need

  • 2 ½ cups Almond flour
  • 2tbsp coconut oil
  • ¾ tsp baking soda
  • ¼ tsp cinnamon
  • ½ tsp salt
  • 2 tsp vanilla
  • 3 eggs
  • ¼ cup maple syrup
  • 1 banana (mashed)
  • juice of 1 lemon
  • ½ cup of chopped apples

Start by preheating your oven to 170℃ and preping your muffin tray with cases.

In a large bowl add the almond flour, baking soda, cinnamon, and salt, then stir well.

Add in the eggs, vanilla, coconut oil, lemon, and maple syrup, then stir till combined. Next fold in the chopped apples.

Spoon the muffin batter into the cases and bake for 20 minutes @ 170until an inserted toothpick comes out clean. leave to cool before serving.
