Clean Healthy Baking- blueberry​ & chocolate​ cookies

Hi, all welcome back to my blog I hope everyone is having a great week! I’m back with my healthy baking series!! I’m so excited, I haven’t posted in a while but I have been experimenting in the kitchen and looks for new fun recipes to try and share. It’s a new year, I’m still living the same healthy lifestyle as last year, it really worked for me and finding theses healthy baked treats helped a lot!

This recipe is for blueberry and chocolate cookies!! These are amazing I found this recipe online and decided to give it a try, I made a small batch and they didn’t last one day at my house! lol, that’s how good they were, the family is big fans. The best thing about these is how easy they are to make, its a really simple recipe anyone can do this.I’m going to go through the ingredients and the how to’s below. If you have started your new year with a healthier lifestyle but your struggling to stay clear of those unhealthy sugary things, these recipes are great!!


All You Need:

  • 1½cups Almond Flour
  • ½ cup Almond butter
  • 3 tbsp Golden syrup
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ½ baking soda
  • 1 cup blueberries
  • 4 tbsp dark chocolate chips

Start by preheating your oven to 175℃ and prep your cookie trays with baking paper.

place blueberries in a small pot and cook over low heat till the berries are soft and slightly mushy then set to one side. In a medium bowl mix together the almond flour, baking soda, cinnamon. Add in the egg, almond butter, golden syrup, vanilla, and blueberries– mix till combined ( you can use an electric whisk or wooden spoon to mix) add the chocolate chips to the batter and stir till combined.

take a tablespoon amount fo the cookie dough and roll it into a ball, place on baking tray and pate down ( cookie shape) do this with the remainder of the cookie dough. Bake in the oven for 15 minutes till golden brown, leave to cool on wire rack before serving.
