Guilt-free chocolate chip cupcakes!!

Hi, all welcome back to my blog I hope everyone is doing well and staying safe! It’s healthy baking time again! I bake once a week, iv been doing this since early January so I have a sugar-free, flour-free healthy treat to grab for if I need it during the week while I’m eating really clean and sugar-free. I have a few great staple recipes I found that I can tweak if I’m needing a change.

I’m baking mostly with almond flour it’s my new go-to instead of white flour and these chocolate chip cupcakes are the perfect treat if your craving chocolate or sugar, I use sugar-free dark chocolate chips that taste amazing there the perfect substitute for regular sugar-filled chocolate and you feel like you have treated yourself. I do feel a lot better without the sugar and processed foods but it’s nice to have a treat. I’m going to go through the ingredients with you and the how do below so I hope you enjoy and give them a try yourself I will also link below the youtube video where I show you how to make them myself so give that a watch & subscribe there for more baking fun!!

All You Need:

  • 2½ cups Almond flour
  • 2 tbsp coconut oil (melted)
  • ¾ tsp baking soda
  • ½ tsp salt
  • ¼ tsp cinnamon
  • 2 tsp vanilla
  • 3 eggs
  • ¼ cup maple syrup
  • 1 banana (mashed)
  • juice of 1 lemon

Start by preheating your oven to 170℃ and link your cupcake tray with cases and set aside.

In a medium-size bowl add in the almond flour, baking soda, cinnamon, and salt and stir.

Next add in the coconut oil, eggs, vanilla, maple syrup, lemon, and banana and stir till combined.

Spoon the batter into the cupcake cases and add however many chocolate chips you would like into each cupcake then bake for 25 minutes.
