Healthy Baking- Banana & almond butter cupcakes!!

Hi, all welcome back to my blog I hope everyone is having a great week. I’m back with some more recipes for my healthy baking series!! I’ve been really busy lately and I find the busier I am and the more workouts I fit into my day, I’m snacking between meals a lot more this week. I do have my go-to snacks like cashews, fruit,& yogurt but I do get the odd sugar craving, and iv found a great recipe I could alter a little that’s really healthy and filling that’s perfect for the sugar cravings!

There banana, almond butter cupcakes, my favorite thing at the minute is almond butter, I’m using it in everything, I’m obsessed! These cupcakes are amazing! full of flavor, there sweet and most important the clean and healthy! I don’t feel quality having one of these with a cup of tea midday. Its a really simple recipe, easy to follow. I’m going to go through the ingredients and the how-to below, I hope you enjoy this one and give it a try yourself.

All You Need :

  • 2 rip bananas
  • 1 large egg
  • 2 tbsp honey
  • ½ cup oats ( blended smooth)
  • ¼ cup almond meal or flour
  • 3 tbsp almond butter
  • 1 tsp vanilla
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • a handful of dark chocolate chips

Start by preheating your oven to 175℃ and rep your cupcake trays with cupcake cases and set aside.

Im a medium bowl mash up the bananas well then add the egg, honey, vanilla, and almond butter and mix well till combined.

In a separate bowl mix together the oats, almond flour, baking soda, and cinnamon till combined.

Add the wet mix to the dry mix and stir till well combined and smooth. Fill your cupcake cases halfway with the batter, then place 3-4 chocolate chips on top of each cupcake and bake for 10-12 minutes till a toothpick comes out with a few moist crumbs and cupcakes are golden in cooler. Leave to cool before serving.
