Sweet Sunday!!! Easter cupcakes
Hi all welcome back to my blog i hope everyone is having a great weekend!! Welcome back to sweet sunday! I’v had a crazy week and weekend but i did take some time get this poost together, Iv found so many great easter teamed recipes its been had to choose each week, i really wanted to find something simple that everyone could do and enjoy. I always go by what my nieces ans nephews like there my testers and cupcakes always win with them so i just try to add to there favorites to make them festive for the occasion!!
This week i baked vanilla cupcakes with creamy frosting and mini eggs on top! These will be a winner in any household trust me!! These were gone within the day everybody loved them, there really moist cupcakes with vanilla frosting, really easy to prepare, not to time consuming you can do it with your kids! I really hope you enjoy this one and give it a try!!
All You Need:
- 2½ cups plain flour
- 2 cups caster sugar
- 3 tsp baking powder
- 1 tsp salt
- 1 cup milk
- ½ cup vegetable oil
- 1 tbsp vanilla extract
- 1 cup water
Vanilla Frosting:
- ½ cup salted butter
- ½ cup margarine
- 4 cups icing sugar
- 2-3 tbsp milk
- 1½ tsp vanilla extract
Start by preheating your oven to 176℃ and line cupcake trays with cases.
In a large bowl add flour, sugar, baking powder, and salt and set aside. In a medium bowl add the milk, vegetable oil, vanilla, and eggs and stir till combined.
Add the wet mixture to the dry mixture and stir with wooden spoon till well combined, slowly add the water to the batter and stir well till combined. The batter will be thin and watery.
Full the cupcake cases halfway with the batter and bake for 15-17 minutes till a toothpick comes out with a few moist crumbs. Leave on a wire rack to cool before decorating with frosting.
To make the frosting place the margarine and butter in a bowl and use a whisk to beat till Smooth, add 2 cups of the icing sugar and beat till smooth. Add the vanilla and 1 tbsp of milk and beat till smooth. Now add the rest of the icing sugar and beat till smooth. you can add the rest of the milk if needed, depending on how thick you like your frosting. I didn’t need any more for mine.
I used a piping bag to decorate the cupcakes with frosting and place 3 mini egg on top of each cupcake.
