Sweet Sunday-Easter treats!!!

IMG_9505Hi, all welcome back to my blog and sweet Sunday! I hope everyone is having a great weekend. I’m using my sweet Sunday and cheat day to prepare for Easter and try out some fun recipes before Easter Sunday to see which ones the family like the best. I have a lot of fun easter teamed cupcake & brownie recipes to try so that’s my plan, ill be sharing all of my favorite Easter treats!! This week I baked easter cupcakes with vanilla frosting & chocolate bunnies on top. These are my favorite vanilla cupcakes, there really moist with creamy frosting and cute Easter bunnies, my nieces & nephews really love these! It’s a pretty simple recipe, really easy to follow, I hope you enjoy and give them a try yourself! I’ll go through the ingredients and the how-tos below. 

All You Need:

  • 2½ cups plain flour
  • 2 cups caster sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 tbsp vanilla extract
  • 1 cup water

Vanilla Frosting:

  • ½ cup salted butter
  • ½ cup margarine
  • 4 cups icing sugar
  • 2-3 tbsp milk
  • 1½ tsp vanilla extract
  • 2 bags of mini chocolate bunnies
  • 2 tsp green food coloring

Start by preheating your oven to 176 ℃ and prepare your cupcake trays with cupcake cases and set to one side.

In a large bowl add flour, sugar, baking powder, and salt and set aside. In a medium bowl add the milk, vegetable oil, vanilla, and eggs and stir till combined.

Add the wet mixture to the dry mixture and stir with wooden spoon till well combined, slowly add the water to the batter and stir well till combined. The batter will be thin and watery.

Full the cupcake cases halfway with the batter and bake for 17 minutes till a toothpick comes out with a few moist crumbs. Leave on a wire rack to cool before decorating with frosting.

To make the frosting place the margarine and butter in a bowl and use a whisk to beat till Smooth, add 2 cups of the icing sugar and beat till smooth. Add the vanilla and 1 tbsp of milk and beat till smooth. add the rest of the icing sugar and beat till smooth, then add the green food coloring and stir well.. you can add the rest of the milk if needed, depending on how thick you like your frosting. I didn’t need any more for mine.

I used a piping bag to decorate the cupcakes with frosting. Place chocolate bunny on top to finish.
