I have some great recipes lined up for my clean baking series, I wanted to do something seasonal this week, I found this apple pie cookie recipe that’s amazing!! They’re perfect for the fall season, I love to make apple pies and cupcakes so I’m enjoying getting creative with the ingredients I’m using to make them healthier for everyone. I made a big batch of these, I just knew my whole family would love them.I’m going to go through the ingredients and the how to down below, it’s pretty simple and straightforward to follow so give it a try!

All you need:

  • 1 cup oats
  • 3/4 cups whole wheat
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • 1/8 tsp salt
  • 2 tbsp coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup maple syrup
  • 1½ cup of diced red apple ( finely diced)

Start by preheating your oven to 180℃ and prepare your cookie trays with baking paper. finely diced up your apples and set aside.

In a medium bowl combine the oats, flour, baking powder, cinnamon, and salt (stir together) In a separate bowl whisk together the coconut oil, egg, and vanilla, then stir in the maple syrup.

Add the wet ingredients to the dry ingredients and stir till combined. next fold in the diced apple. Roll a tablespoon of the cookie dough in a ball and place on the cookie tray and pate down with a fork. Do this with the remainder of the dough.

Bake cookies in the oven for 13-15 minutes till they’re golden in color. Leave to cool on a wire rack before serving.
