Sweet Sunday- Biscoff Cupcakes
Hi, all welcome back to my blog I hope everyone is having a great weekend, iv been building my strength up slowly and getting back to a more normal routine, so I’m back with a sweet Sunday recipe, I’m trying to get back to my healthy meal prepping ways so I’m sticking to my treat day again, Iv been wanting to try this recipe for a long time but I was finding it hard to find the ingredients, now that I have I finally got to make these cupcakes and there amazing!!
This week I baked Biscoff Cupcakes with buttercream Biscoff frosting! When I finally found the biscoff spread to actually give this recipe a try I was so excited, I ended up finding it in “Deals” I could find it anywhere else! Its a super simple recipe to follow, so it would be a lot of fun to have your kids help out. I’m going to go through what you need and the how-tos below I hope you enjoy and give it a try yourself.
All You Need:
- 150g Unsalted butter
- 150g Light brown sugar
- 3 medium eggs
- 150g Self raising flour
Buttercream biscoff frosting :
- 150g Unsalted butter
- 300g icing sugar
- 200g Biscoff spread
Decorate with crushed biscoff biscuits
Start by preheating your oven to 180℃ and prep your cupcakes tray with cases and set aside.
Place the butter and the brown sugar into a medium-size bowl and beat till fluffy, add in the eggs and flour and beat till well combined.
Fill your cupcake cases halfway with the cupcake batter and bake for 19 minutes till an inserted toothpick comes out clean, Then set aside till completely cooled.
To make the buttercream frosting place the butter into a medium-size bowl and beat till creamy, add in the icing sugar slowly and beat till smooth and creamy, next add in the Biscoff spread and beat till its the consistency you like, you can add water to do that if you want, I like my buttercream thick so I didn’t add any in.
When your cupcakes are completely cool you can use the back of a spoon or a piping bag to ice your cupcakes, whichever you prefer, I used a piping bag for mine. To finish off your cupcakes take the crushed biscoff biscuit and sprinkle on top.
