Sweet Sunday- Creme egg Cheesecake
Hi, all welcome back to my blog I hope everyone is enjoying there weekend despite this awful weather! As you can tell from the title I’m back with another sweet Sunday post!! Its been so long since I have done one of these my last few baking blogs have been more focused on healthy baking but we all need a treat every now and then, a cheat day is always in order. I’m trying to get back to a normal routine so ill be doing a mixture of healthy baking and a few cheat day recipes so I do hope you enjoy it.
This week I baked a creme egg cheesecake! Cheesecake is my favorite go-to dessert just like my dad! I found this great recipe that’s super easy to prepare and I just added one of my favorite treats which are of course creme eggs! I can’t have them that often so I decided to go all out with this one!! You can replace the creme egg with a different candy you prefer you can make it your own like I said it a simple recipe, I’m going to go through the how-to and ingredients below I hope you enjoy this one and give it a try yourself, I feel like this could be a great easter Sunday dessert when you have all the extra chocolate in the house!
All You Need:
- 200g Digestive biscuits
- 85g butter (melted)
- 375g mascarpone cheese
- 100g icing sugar
- 250mls whipped cream
- 3½ creme eggs (filling) 2½ (decorate)
Start by prepping your baking tray with baking paper or you can grease it with butter, use a cake tin with a loose bottom.
Place the digestive biscuits in a bowl, you can use a rolling pin to crush the biscuits till there finely crushed, I used my mortar & pestle, you could also use a food processor whichever you prefer. Next, add your melted butter to the crushed biscuits till combined.
Pour the biscuit mixture into your baking tray, use a spoon to spread the mixture and press it firmly to the base of the tray. Place your base in the fridge to chill while you prepare your filling.
In a medium-size bowl place the mascarpone cheese and icing sugar, use a wooden spoon to mix together until combined. Add the whipped cream to the mixture and stir well and set aside. Take your creme eggs and chop them into pieces, use a wooden spoon to fold the creme egg pieces into the mixture till combined.
Add the filling to your biscuit base, use a spoon to spread the mixture over the base evenly, now place in the fridge for 5- 6 hours to set. When your cheesecake is set take the remainder of your creme eggs and slice them in two and place on top to decorate before serving!
