Healthy Baking- paleo ginger cookies

IMG_9505Hi, all welcome back to my blog I hope everyone is having a great week, I’m back to my normal schedule and back with my healthy baking series!! I’ve been really strategic with my clean eating and having one cheat day a week, it’s been a lot easier with these healthy clean treats to keep any sugar cravings at bay. I find homemade treats are so much better because you know exactly what you’re putting in your body. I’m going to try and post one healthy baking post a week now I’m back on track!

This week I baked paleo ginger cookies, There really light, chewy & sweet with no sugar. A really healthy cookie that the whole family will love! There is a lot of ingredients with this recipe and I know it can turn people off because it a lot of prep but I find if you measure everything out before you start it makes it a lot easier and you can enjoy doing it, I personally find these kinds of recipes the most relaxing to do. When you’re prepared it’s a really simple recipe to follow, so I hope you enjoy and give it a try yourself.

All You Need:

  • ¼ cup coconut oil
  • ¼ cup coconut sugar
  • 1 egg
  • 2-3 tbsp Molasses
  • 1/3 cup coconut flour
  • 1 tsp ginger
  • ½ tsp cinnamon
  • ½ tsp baking soda

Start by preheating your oven to 175℃ and prep your cookie trays with baking paper and set to one side.

In a medium bowl mix together the coconut oil and coconut sugar till combined.  Then add in the molasses and egg and stir well. fold in the cinnamon, ginger, baking soda, and coconut flour and stir till well combined.

Next, take a tablespoon of the cookie dough and roll it into a ball, place on your baking tray and pat it down. Do this with the remainder of the cookie dough. Bake in the oven for 10 minutes till the cookies are golden in color. Leave to cool completely before serving.
