Sweet Sunday! Rainbow Cupcakes
Hi, all welcome back to my blog I hope everyone is enjoying the weekend! Iv been enjoying spending a lot of time with my family and of course, I prepare the treats for the occasion! Just like last week I really wanted to find something that everyone will enjoy and that doesn’t take time away from my family time. As much as I love everything I do the events that have happened over the last month have really put life into prespective and has opened my eyes up to what’s really important.
So this week I went with vanilla cupcakes with rainbow frosting, my niece is all about rainbows and unicorns so she loves the pretty colors I choose for these cupcakes. These are my go-to moist vanilla cupcakes, this is the best recipe for moist cupcakes iv found, it simple and easy to prep, the rainbow icing is a little tricky but I will put in pictures and directions so I hope it helps and you give it a try yourself.
All You Need:
- 2½ cups plain flour
- 2 cups caster sugar
- 3 tsp baking powder
- 1 tsp salt
- 1 cup milk
- ½ cup vegetable oil
- 1 tbsp vanilla extract
- 2 large eggs
- 1 cup water
For the Frosting
- ½ cup butter
- ½ cup margarine
- 4 cups icing sugar
- 1½ tsp vanilla extract
- 1 tsp red food coloring
- 1 tsp yellow food coloring
- 1 tsp green food coloring
Start by preheating your oven to 180℃ and line your cupcake trays with cupcake cases and set aside.
In a large bowl mix together the flour, sugar, baking powder,& salt and set to one side. In a medium bowl place the milk, eggs, oil, and vanilla and stir till combined.
Add the wet mix to the dry mix and stir well, add in the water and stir till combined, the batter should be watery. Fill your cupcake cases halfway with the cupcake batter and bake for 15-17 minutes till a skewer comes out with some moist crumbs. Leave cupcakes to fully cool before decorating.
To make the icing use an electric whisk to mix together the butter and margarine till pale and creamy, add in 2 cups of the icing sugar till well combined, add in the vanilla and whisk again till combined. Next, add in the last 2 cups of the icing sugar and whisk till well combined.
Next, separate the icing into three bowls and add the food coloring to make the three colors as seen in the pictures. place a spoon full of the three colors beside each other on cling film ( as shown in pictures, then roll into log shape and twist ends to seal. use scissors to cut one end and place it into a piping bag them pip your cupcakes as you would normally.
