Sweet Sunday- St Patrick’s Day cupcakes!!!

IMG_9505Hi, all welcome back to my blog I hope everyone is having a great weekend and happy St Patrick’s day! Welcome back to sweet Sunday. I was excited to find a great recipe for this week, I really wanted to get festive with it and have something for St Patrick’s day that everyone can enjoy this Paddy’s day! It’s had to pick one thing that will keep everyone happy usually I’m just thinking of my cheat day!! lol but its a holiday so I decided to go with cupcakes that family fav!!

This week I baked fluffy moist chocolate cupcakes with green vanilla frosting & mint aero topping. If you love chocolate & frosting you’ll love these, it a classic recipe easy to make, really simple recipe to follow.I’ll go through the ingredients and how-to’s below, I hope you enjoy and give it a try yourself.  

All you need:

  • 1 cup plain flour
  • 1 cup caster sugar
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 large egg
  • ½ cup buttermilk
  • ½ cup vegetable oil
  • 1 tsp vanilla
  • ½ cup hot water

Frosting

  • ½ cup salted butter
  • ½ cup margarine
  • 4 cups icing sugar
  • 1½ tsp vanilla
  • 2-3 tbsp milk
  • 2 tsp green food coloring
  • 1 bar mint aero ( chopped up small)

Preheat your oven to 175℃ and prep your cupcake trays with cupcake cases and set aside.

In a large bowl mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt and set aside.

In a medium bowl mix together the egg, oil, buttermilk, vanilla, and hot water till combined. Add the wet mix to the dry mix and stir till combined. The batter should be thin & watery.

Fill your cupcake cases halfway with the batter and bake for 18 minutes until a toothpick comes out with a few moist crumbs. Leave cupcakes to cool completely before frosting.

To make the frosting, use an electric whisk to mix together the butter and margarine till pale and smooth, Add 2 cups of the icing sugar and beat till smooth, next add the vanilla and 1 tbsp of the milk and beat again till smooth. Add the remainder of the icing sugar till smooth. add the remainder of the milk till you get the consistency you like. Finally, add the green food coloring add beat well.

Use a piping bag to frost the cupcakes and sprinkle the mint aero pieces on top to finish.
