Clean healthy baking!! lemon muffins
Hi all welcome back to my blog, i hope everyone is having a great week and you can tell you the title I have some more healthy clean baking recipes to share , I’m really going to try and get one up a week as I do bake at least one batch of healthy treats to have at the house in case I get a craving!!lol I found a recipe online that I really liked but I had to make lots of changes to the ingredients to make it a healthier option and it worked out amazing!! These lemon muffins are so good! There super easy to make. I’m going to go through the ingredients with you below and the how-to, it pretty simple it only took me a few minutes to through together. All you need:
- 1²⁄³ cups whole wheat flour
- ¹⁄³ cup total sweet xylitol
- 2 tbsp baking powder
- ½ tsp salt
- ¹⁄³ cup coconut oil
- ²⁄³ cup greek lemon yogurt
- ¹⁄³ cup milk
- 1 egg
- 1 tbsp lemon juice
How to:
Start by preheating your oven to 180℃ and prepare your muffin tray with cases, this recipe makes 12 muffins
In a medium bowl combine the dry ingredients, flour, sugar, salt, and baking powder and leave to the side. Next mix together the yogurt, coconut oil, egg, milk, and lemon juice in a bowl, pour the dry ingredients into the wet and stir till combined.
spoon the baker into the muffin cases and bake for 15-20 minutes till the muffins are golden brown.
