Sweet Sunday- Red velvet brownies with white chocolate icing
Hi all, welcome back to my blog and sweet Sunday. Really looking forward to my cheat day this week!! Another week of clean eating needs to be rewarded I feel! I’ve been working out so hard and eating so well, my cheat day helps me stay on track I would recommend it to anyone! This week I when all out with the treats for sure! lol, I baked red velvet brownies with white chocolate icing, they are heaven!! If your gonna treat yourself, do it right!! I love this recipe, it’s easy to follow, nothing complicated its fun to do. Get it a try, you’ll love it!!
All You Need:
- ½ Cup of butter
- 1½ cups of sugar
- 2 eggs
- 2 tsp vanilla
- 1¼ cups plain flour
- ¼ tsp salt
- 3 tbsp cocoa powder
- 2 tsp red food coloring
For the Frosting:
- ½ cup butter
- 2½ cups icing sugar
- 1 tsp vanilla
- 4 ounces of white chocolate melted
- ½ tsp milk
Preheat your oven to 175℃ and prepare your brownie tray with baking paper and set aside.
In a small bowl mix the cocoa powder, food coloring and 1 tsp of the vanilla to form a paste and set aside.
Beat together the butter and sugar until light and fluffy. Add the eggs one at a time beating well in between. Then add the second tsp of vanilla and stir till combined. Beat in the cocoa paste. Next, add in the flour and salt to the mixture and stir well with a wooden spoon till just combined.
Spread the mixture into the brownie tray and bake for 25-30 minutes until inserted skewer comes out clean. Leave brownies to cool fully before frosting.
To make the icing: beat the butter till fluffy, add the vanilla and slowly mix, add in the icing sugar gradually beating well after each, then add the white chocolate and beat till combined. you can add the milk to reach the desired consistency. when the brownie is cool you can spread the icing on using a knife.
