Sweet Sunday- Lemon drops
Hi all, welcome back to my blog and sweet Sunday. This week I decided to dig out some of my summer recipes, perfect for this weather we’re having. I haded baked these in a while, there for sure something that I love and the fam. I baked a big batch and literally go ONE out of it!! This week I baked lemon drops, they’re like a light woopie biscuit with a creamy lemon filling, there amazing. What I love is they don’t take long to prepare, you don’t wanna be stuck in the kitchen in this weather!! You can whip a batch up in no time I hope you enjoy this one and give it a try yourself.
All You Need:
- 125g softened butter
- ¾ cups plain flour
- ¼ cup icing sugar
- 1/3 cup custard powder
Filling:
- 60g butter (softened)
- 2/3 cup icing sugar
- 2 tsp grated lemon rind
- 1tsp lemon juice
Preheat your oven to160℃, line your baking tray with baking paper and set aside.
Use an electric whisk to beat the butter till pale and creamy. Add in the flour, icing sugar, and custard powder, use a wooden spoon to combine. Use your hand to roll a tsp of the dough into balls. Place them on the baking tray and use a fork to gently flatten.
Bake for 15 minutes till cooked through. Remove from the oven an set aside to cool completely.
For the filling: Beat together the butter and icing sugar until light and fluffy, add the lemon rind and juice then stir till combined. Spread the filling on the flat side of the cookie and sandwich together with the remaining. And Enjoy!!!
