Sweet Sunday- Raspberry blondies
Hi, all welcome back to my blog and sweet Sunday!! it has been a while since iv posted a sweet Sunday recipe. I’m excited to be back with something new for you, my sweet Sunday blog is my favorite thing to do so I have really missed it. The recipe I’m sharing this week has been in my recipe book for a long time, its one my mother really loves me making. Everyone in my family has a section in my recipe book, those recipes that are there favorite so a least one person is happy with what comes out of the oven on sweet Sunday! lol
This week I baked Raspberry Blondies! I just love baking with fruit and chocolate, I know iv said this before, my mother would always say add fruit makes the recipe not so lushes, its a nice balance, that’s her famous saying! lol So give this a go, it’s pretty simple and I really hope you enjoy.
All You Need:
- 250g Unsalted butter
- 2 cups caster sugar
- 3 large eggs
- 1 cup plain flour
- 1 tsp vanilla extract
- 250g white chocolate (melted)
- 200g raspberries (chopped)
- 100g white chocolate chips
Preheat your oven to 180℃ and line your baking tray with baking paper and set aside.
Melted the butter in the microwave, stir till smooth and set aside.
With an electric whisk beat together the eggs, caster sugar, and vanilla extract until it turns pale in color and a mousse-like consistency. ( it should double in volume)
Beat in the melted butter a little at a time and beat well each time till combined. Sift the plain flour into the mixture and fold together till combined.
Add the white chocolate chips and chopped raspberries to the mixture and stir well. Pour the mixture into your baking tray and bake for 35-40 minutes till golden in color. Leave the blondies to cool in tray completely. Drizzle the melted white chocolate over the blondies and cut into square to serve!!
