Sweet Sunday- Banoffee Pie

Hi, all welcome back to sweet Sunday I hope everyone has had a great week.It was so nice to get back to normal, being able to get out of the house and back to a normal routine I was getting cabin fever!!My first run in a week felt so good!!And with the grocery store stocked up again thank god I could make the recipe I really wanted to do last week which is a favorite dessert of mine which iv never actually tried making myself so this fun for me.The first time you try something new in the kitchen and it turns out perfect & everyone loves it is a great feeling.

This week I made a banoffee pie, I have plenty of experience eating banoffee pie but this is my first attempt at making it!!lol My first time trying a recipe I like to be super prepared with everything, timing everything exactly its so much fun for me. there are three parts to this recipe, breaking it down makes it really easy. so give it a go see how you get on.

All You Need Is:

For the shortbread:

  • 1½ cups plain flour
  • 1 cup butter ( softened)
  • ¼ cup icing sugar
  • 1 heap tsp cornflour

For the Toffee:

  • 1 can condensed milk

For the Topping:

  • 3 Bananas sliced
  • 1 Carton of cream ( whipped)
  • 2 crushed Cadburys flakes

I started by preparing the toffee, you put the tin of condensed milk into a pot of boiling water,(i used the deepest pot I could find) bring to a boil on the stove then lower the heat and let it simmer for 2½- 3 hours.Then remove from pot and allow to cool. You can prepare this the day before if you want.It’s really important that the tin is COMPLETELY covered with water and make sure the level of water doesn’t go below the tin cause that’s when it goes Boom!! and your left cleaning toffee off the ceiling!!

For the shortbread, preheat your oven to 180℃ and line a loose bottom tin with baking paper and set aside.

Seive the flour, icing sugar, and cornflour into a bowl and rub in the butter till it resembles breadcrumbs.

Press into the prepared baking tin, bake for 20 minutes until golden in color, then leave to cool.

When the base is cooled pour the toffee over the base and spread evenly, gently remove from cake tin and transfer to serving plate.Arrange the bananas on top of the toffee, cover with the whipped cream and then decorate with the crushed flake chocolate.

Then Enjoy!!!
