Sweet Sunday: Carrot cake cookies with cream cheese frosting filling

IMG_2380Hi all, Welcome back to sweet Sunday, I hope everyone had a great week.I try so hard to eat as clean as I can in preparation for sweet Sunday!!lol aka my cheat day! That’s, why I take such care in choosing sweet Sunday recipes cause it’s my one thing.So this weeks recipe is a great one.I hope you like it and give it a try yourself!

This week I baked carrot cake cookies with cream cheese frosting filling!These are amazing.When I found this recipe I couldn’t wait to try it, carrot cake is by far my favorite cake and these little cookies are heaven! There is a lot of ingredients in this recipe, my best tip for you is to prepare and measure everything out before you start, it makes it easier and you won’t get overwhelmed you’ll be able to enjoy what you’re doing.

All You Need is:

  • 1¼ cups plain flour
  • ½ cup of oats
  • ¾ tsp baking soda
  • 1¼ tsp ground cinnamon
  • ¼ tsp ground ginger
  • 1/8 tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup unsalted butter
  • ½ cup white sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup finely grated carrot (4 carrots)
  • ¾ cups chopped walnuts

Cream cheese frosting filling:

  • 1/3 cup cream cheese
  • 1/3 cup butter
  • ½ tsp vanilla extract
  • 2 cups icing sugar

In a large bowl mix together the dry ingredients, flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. set aside.

In another bowl beat together the white sugar, light brown sugar, and butter until blended.Add the egg and vanilla and beat till combined.

Next, add the dry mix to the wet mixture and beat on a low speed until combined.Stir in the carrots and walnuts. Cover the dough and leave to chill for 1hr and 15minutes.

Preheat your oven to 175℃ and prepare your cookie trays with baking paper.This recipe makes 8 cookies.

Take 2 tbsp of the dough and roll into a ball and place on your baking tray, do this with the remainder of the dough, leave 2inches between cookies to allow them to expand.Bake for 12-13 minutes.remove from oven and allow to cool on baking tray for several minutes.

Next prepare the cream cheese frosting filling, place the cream cheese, butter and vanilla in a bowl and beat till smooth add the icing sugar a cup at a time and beat till combined, you can add more icing sugar to get the consistency you want.

sandwich the cookies together with the cream cheese frosting filling in the middle and enjoy!!
