Baking Saturday: Raspberry Cinnamon rolls with lemon cream cheese glaze

Hi all, welcome back to sweet Sunday. I hope everyone had a wonderful and positive week!Its been a crazy week for me, a lot of changes so I’m just trying to get used to my new schedule and make sure I make time for my blog. Found a recipe this week that I loved, I did change a few thing to make it my own.That’s something my grandmother always did.It’s funny I find myself doing it now.Another tradition I’m caring on.

This week I baked raspberry cinnamon rolls with lemon cream cheese glaze. This is a simple recipe to follow.When I have a recipe like this with three stages: dough, filling & frosting I like to prepare each as I go along it makes it a lot easier.I love this one, it’s been a huge hit in my house! when you barely get a bit you know its good!!lol. I hope you like it and give it a try yourself.

All you need:

  • 3¼ cups plain flour
  • 2 tsp instant yeast
  • ¼ cup white sugar
  • ½ tsp salt
  • 1 egg
  • ¼ cup water
  • ¾ cups milk
  • 1/3 cup butter

Filling:

  • 1 can raspberries in syrup
  • 2 tsp cinnamon
  • ½ tsp sugar

Lemon cream cheese glaze:

  • 113g cream cheese
  • 4tbsp butter
  • 1 cup icing sugar
  • 1tsp vanilla
  • 2 tbsp milk
  • 2tsp lemon juice
  • 1 tbsp lemon zest

Start by preheating your oven to 190℃, line your baking tray with baking paper and set aside this recipe makes 9 rolls.

 

 

 

 

In a large bowl combined  2¼  cups of flour, yeast, sugar, and salt. Whisk together the egg and water and add to the flour mix, stir till combined. Add the remaining flour and butter/milk mixture until the dough starts to form.

On a lightly floured surface roll out the dough out into a large square.Spread the raspberry filling evenly over the dough.In a small bowl combine the sugar and cinnamon and sprinkle over the raspberry filling.Roll up into a log and cut into 9 slices and place into your prepared baking tray.

 

 

 

Cover the rolls with a damp cloth for 30 minutes till they rise.baking for 30 minutes until golden brown. 

 

 

 

 

To make the glaze use an electric whisk to beat the cream cheese, butter, vanilla, lemon juice and zest until combined. Add the icing sugar and milk and beat until smooth and creamy.

I used a fork to drizzle the glaze over the cinnamon rolls.
