Baking Saturday: Harvest apple cupcakes with cream cheese frosting

Hi, all welcome back to sweet Sunday! I hope everyone had a wonderful and positive week.This week has been kinda crazy for me I was really looking forward to taking some time to myself in the kitchen to bake, it’s my chill time, my time to relax and enjoy baking.This weeks recipe is a fun one, I really love this time of year I always make big batches and share it with my siblings and their families.Its how to keep the family close I feel.lol Just like my grandmother would do it.I hope you enjoy this one like my amazing gang does.

This week I made harvest apple cupcakes with cream cheese frosting.It’s like Christmas in a cupcake, really!There amazing with my go-to cream cheese frosting which I’m obsessed with.It’s a pretty simple recipe to follow its straightforward.My secret is to have everything prepared before you start it makes it so much easier. 

All you need:

  • 1½ cups caster sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 cups plain flour
  • 1tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • ½ tsp salt
  • 3 cups of apples chopped
  • 1 cup walnuts ( finely chopped)

Cream cheese Frosting:

  • ¼ cup cream cheese
  • ¼ cup butter
  • 1 tsp vanilla
  • 2 cups icing sugar

Start by preheating your oven to 180℃ and preparing your cupcake trays with cases, this recipe makes 24 cupcakes.

 

 

 

 

In a large bowl beat together the eggs, sugar, and oil on a low speed till combined.Add the flour, baking powder, vanilla, cinnamon, and salt to the mixture and stir with a wooden spoon till combined.                                                             Stir in the apples and walnuts.

 

 

 

 

Spoon the batter into the cupcake cases and bake for 30-35 minutes until they’re golden brown and inserted skewer comes out clean.

 

 

 

 

Leave to one side to cool while you prepare the cream cheese frosting

For the frosting beating together the butter, cream cheese and vanilla till combined beat in the icing sugar till smooth and creamy.                                                                                                                                                                                          Use a knife to spread the frosting onto the cupcakes, it doesn’t have to be fancy I like it to look homemade.
