Baking Saturday: Apple and custard rolls

Hi all, welcome back to sweet Sunday! I hope everyone has a wonderful and positive week, iv been keeping busy but I have been giving a lot of thought to this weeks recipe, I do have a lot in mine for this season that I love to break out so I hope you enjoy.These recipes for me are traditional for this time of year, for me it’s not just the yummy treats at the end but the memories I have, when I’m in the kitchen mixing ingredients it brings me right back to my childhood. I can close my eyes and be back in my grandmother’s house as a child just from inhaling the aromas in the kitchen.Its why i love it so much.

This week I baked apple and custard rolls. These are amazing!! there is nothing like the smell of cinnamon in your kitchen, this is one of those recipes that you can smell in your kitchen for days!! This I would call an easy enough recipe, it’s not complicated.

All you need is:

  • 1 tbsp custard powder
  • 1 tbsp caster sugar
  • 3/4 cup milk
  • 2 1/2 cups selfie raising flour
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 125g unsalted butter (chopped)
  • 2/3 cup buttermilk
  • 1/2 cup applesauce

Preheat your oven to 180℃ and line baking trays with baking paper, this recipe makes 10 slices.

Place the custard powder, caster sugar, and milk into a saucepan on medium heat, stir for 2-3 minutes or until thick then remove from heat and set aside to cool.

 

 

 

 

Place flour, brown sugar, cinnamon, and butter in a large bowl, use your fingers to rub butter into the flour mixture till it resembles fine breadcrumbs, add the buttermilk to the mixture and use a wooden spoon to stir till combined.

 

 

 

 

Turn the dough onto lightly floured surface and roll out dough into a 20cmx30cm rectangle, spread the dough evenly with custard, top that with the applesauce.roll the dough up like a swiss roll and freeze for 20 minutes until firm. Trim the edges and cut 8 even slices. arrange slices cut side up and bake for 20 minutes or until golden in color, transfer to wire rack to cool.serve hot or cooled.
