Baking Saturday: banana and chocolate chip muffins
Hi all, welcome back to sweet Sunday! I hope everyone had a wonderful and positive week.Iv had a busy week myself, iv been gathering a few recipes that I love to make at this time of year, so ill be sharing them over the next few week, I’m so excited I really hope you enjoy.These recipes really remind me of my grandmother, I always remember this time of year at her house, walking in on a dark evening and being knocked back by the yummy smells from the kitchen.I know she would love to see me carrying on her traditions.
This week I baked banana and chocolate chip muffins, these are really simple to make and just add some fresh cream and there perfect for these cold evening with a cup of tea.
All you need:
- 1tbsp vegetable oil
- 3 bananas peeled and chopped
- 1 whole egg & 2 egg whites
- 250mls skimmed milk
- 2 cups self-raising flour
- 1 cup light brown sugar
- 1/2 tsp bicarbonate soda
- 1 1/2 cup chocolate chips
Start by preheating your oven to 190℃ and grease your muffin tray, this recipe makes 6 muffins.
Use a food processor to blend together the bananas, oil, egg, egg whites and milk.
In a bowl sift together the flour, sugar and bicarbonate soda.Stir in the chocolate chips.Fold the banana mixture into the flour mixture till combined
Spoon the batter into the muffin tray and bake for 25 minutes, until muffins have risen and an inserted skewer comes out clean. Serve hot or cold.
