Baking Saturday: Chocolate chip cookie cheesecake slices

 

HI, all, Welcome back to sweet Sunday. I hope everyone had a wonderful week.I’ve  been digging through my recipe book for some fun Fall recipes to whip up!!This weeks recipe is a favorite of mine, it’s my got to comfort food Which I really really need this Sunday.I hope you enjoy it.

This week I baked chocolate chip cookie cheesecake slices, It’s pretty simple to prepare and bake, it one of the easiest recipes I have so I hope you enjoy this one and try it yourself.

All you need is:

  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup softened butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups chocolate chips

For the filling:

  • 8oz softened cream cheese
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla extract

Preheat your oven to 180℃ / prepare a square baking tray with baking paper and set aside for later.

In a bowl mix together the flour, baking soda and salt and set aside. In another bowl beat together the butter, brown sugar and white sugar until creamy and fluffy.Add the egg and vanilla and beat till combined.

 

 

 

 

Next, add the wet mix to the dry mix and stir till combined.Add the chocolate chips and stir till combined.

Press 2/3 of the cookie dough in the bottom of the baking tray forming an even layer and set aside.

 

 

 

 

Beat together the filling ingredients ( cream cheese, sugar, egg, and vanilla) till creamy.

 

 

 

 

Spread the filling over the cookie dough evenly, then crumble the remaining cookie dough over the filling layer and bake for 40 minutes until cheesecake is set and the dough is light brown. Allow cooling completely before cutting into slices.
