Baking Saturday: Cinnamon confetti Rolls
Hi All, Welcome back to sweet Sunday!!I hope everyone had a wonderful and positive week!I’ve been going through my recipes to find something fun to share with you this week, It’s really hard because there is so much to choose from!So I really hope you enjoy what iv chosen this week and try it yourself.
This week I baked cinnamon confetti rolls, these are my parents favorite so its there treat for this week, I really hope you enjoy, it’s pretty simple to prepare so give it a try yourself!
All you need is :
- 75g butter (softened)
- 1/2 cup light brown sugar
- 1 tsp ground cinnamon
For the dough:
- 21/4 cup self-raising flour (sift)
- 1 tbs caster sugar
- 2/3 cup milk
- 1 egg
- 1/2 cup hundreds and thousands
Start by preheating your oven to 180℃ and prepare 2 baking trays with baking paper and set aside.
To make the dough, combine the flour and sugar in a bowl and add the butter, use your fingers to rub the butter into the flour until it resembles fine breadcrumbs, make a well in the middle and set aside.
Whisk the egg and milk in a small jug, then pour into the well.Use a fork to stir the mixture until sticky dough forms.
Turn the dough onto a lightly floured surface and roll the dough out.Sprinkle butter over the dough.Combined the brown sugar and cinnamon in a bowl and sprinkle it over the dough.
Roll the dough up to form a log and slice it into 12 slices. Place the slices onto the prepared trays and bake for 25-30 minutes until golden brown.Leave on the wire rack to cool.
if you would like to top with cream cheese frosting simple use an electric whisk to combined 1/3cup cream cheese, 1/3 cup butter and 1tsp of vanilla essence till combined then add 11/2 cup icing sugar and beat till combined, next drizzle the frosting over the rolls and sprinkle hundreds and thousands to top!
