Baking Saturday: Raspberry and apple tarts
Welcome back to sweet Sunday, I hope everyone had a wonderful and positive week.Iv been trying some new things this week and I came across a recipe that reminded me of my grandmother Ginny, It’s something I think she would have loved.She is the reason I love to bake, my inspiration so I baked in her honor this week ❤️
This weeks recipe is raspberry and apple tarts, it’s so simple to prepare, nothing complicated and I’m sure it will be a family favorite, so I hope you enjoy and try it yourself.
All you need is:
- 3 eggs ( beaten)
- 1 cup sour cream
- 1 cup caster sugar
- finely grated rind of 1 lemon
- 1 apple ( peeled and chopped)
- 1 1/3 cup plain flour
- 1 1/2 Tsp baking powder
- 1 tsp ground cinnamon
- 150g fresh raspberries
- icing sugar to dust
Start by preheating your oven to 180℃, and prepare muffin trays.This recipe makes 12 tarts.
In a bowl stir together the eggs, sour cream, caster sugar, rind, and apple.Next stir in the flour, baking powder and cinnamon and stir till combined, then add the raspberries and stir.
Spoon the mixture into the muffin trays and bake for 25-30 minutes, till skewer comes out clean.Serve dusted with icing sugar.
