Baking Saturday: confetti cream pies
Hi all, welcome back to sweet Sunday!! I hope everyone had a wonderful week.I’ve been physically injured this week ( I’ll be sharing info in another post) but still in great spirits.When I can’t be physically active I like to focus on eating really clean so that’s what iv been doing this week, so I’m so excited for my cheat day!! my sweet Sunday!!
This week I made confetti cream pies, they’re so yummy!! I decided to make this because I know my baby niece will love the pretty colored sprinkles, it’s her first week of big school so these are a special treat for her.I really hope you enjoy this recipe and try it yourself.
All you need is:
- 125g butter (chopped)
- 1/2 cup caster sugar
- 1/2 cup brown sugar
- 1tsp vanilla extract
- 1 egg
- 1tsp bicarbonate of soda
- 21/2 cup plain flour
- 11/3 cup buttermilk
- 1/3 cup hundreds and thousands
For the butter cream filling:
- 125g butter(softened)
- 2 cups icing sugar
- 11/2 tbs milk
- 2 drops pink food coloring
First, preheat your oven to 170℃ and prepare two baking trays with baking paper and put to one side. Beat together the sugars, butter, and vanilla until pale and creamy, then beat in the egg.
Stir in the bicarbonate of soda. Add the flour and butter milk in alternating batches and stir with a wooden spoon till combined and smooth.
Use an ice cream scoop to place rounds of the mixture onto your prepared baking tray.Leave at least 5cm between each to leave enough room to spread.sprinkle the hundreds and thousands on to each before placing in the oven. Bake for 10 minutes.remove from oven and allow to cool completely.
To prepare filling beat together the icing sugar and butter till combined.Add milk and beat till combined, next add the food color and beat well.
Use a knife to spread the butter cream filling on half of the pies and sandwiches together the remaining pies.And that it, enjoy!!!
