Baking Saturday: White chocolate and Raspberry macaroons
Welcome back to sweet Sunday! I hope everyone has had a great week.Iv been writing a lot, so there will be new content coming really soon!!I’m really trying to at least be consistent with my sweet Sunday posts, what I eat on my cheat day, I really hope you’re enjoying these recipes.
This week I make white chocolate and raspberry macaroons.These didn’t last very long in my house! They were eaten as soon as they were ready. I always know there good when I barely get a bit!!lol
All you need is:
- 1 1/3 cup icing sugar
- 1 cup almond meal
- 3 egg whites
- 2 tbsp caster sugar
- 1 cup raspberry jam
- icing sugar for dusting
For the white chocolate ganache:
- 60g white chocolate
- 1tbsp double cream
- 10g butter (softened)
Start by preheating your oven to 125℃ and line two baking trays with baking paper, this recipe makes 18 macaroons.
Sift icing sugar into a bowl, add the almond meal and put to one side. Next, use an electric whisk and beat the egg whites till soft peaks form, add the caster sugar and beat till the sugar dissolves.
Fold the egg whites into the almond meal and mix till combined.
Spoon two teaspoons of the mixture on top of each other per macaroon. leave room for the macaroon to spread, at lease 5cm. leave to set for 15 minutes before putting into oven dust with icing sugar before baking. Bake for 25 minutes until lightly golden. Leave to cool completely on tray.
To make the ganache, place the white chocolate and cream in a saucepan over low heat for 2 minutes till the chocolate melts, remove from heat and add butter then whisk till combined. Transfer mixture into a bowl and place in the freezer for 15 minutes till nearly set.
Next lift the macaroons off baking paper and spread a teaspoon of the ganache on to the flat side of half the macaroon with a teaspoon of raspberry jam on top of each and sandwich with remaing macaroons. And your done enjoy!!!
