Baking Saturday: ginger cream cookies
Hi everyone, welcome back to sweet Sunday. I hope everyone had a positive week.This weeks recipe I have been meaning to do for ages it’s super simple, doest take long to prepare.One the hold family will enjoy.
This week I made ginger cream cookies!Like I said before there really easy to make, nothing complicated and if you love eating ginger bread man you’ll love these!!
All you need:
- 3/4 cup plain flour
- 1/2 cup self-raising flour
- 2 tsp ground ginger
- 1/4 tsp bicarbonate of soda
- 75g butter (softened)
- 2/3 cup caster sugar
- 2 tbs golden syrup
- 2 eggs
For the filling:
- 125g butter (softened)
- 1 1/2 cups icing sugar
- 2 tsp golden syrup
Preheat your oven to 170℃ and line two cookie trays with baking paper this recipe makes 20 cookies. Use an electric whisk to beat together the butter, sugar and golden syrup until light and fluffy.Add the eggs one at a time and beat after each until combined. beat on medium speed until smooth and creamy.
In a separate bowl sift together the self-raising flour, plain flour, ground ginger and bicarbonate of soda.
Add half of the dry mix to the wet mixture and beat until combined, then add the remainder of the dry mix and beat until fully combined.
Spoon two teaspoons of the batter ( for each cookie) onto the baking tray, leave room for the cookie to spread (about 5cm) bake for 13-15 minutes until cookies are golden and firm to touch. leave to cool fully while you prepare the filling.

For the filling, beat the butter until fluffy and creamy, gradually add in the icing sugar and beat till combined, then add the golden syrup and beat till smooth and creamy.
Use a knife to spread the filling on the flat side of the cookie then take another cookie and make a sandwich, do this with the rest of the cookies.
