Baking Saturday: brownie biscuits with caramel fraiche filling

 

 

Hi all welcome back to sweet Sunday, I hope everyone had a wonderful and positive week. I had a few recipes to choose from this week which made it hard for me, I love baking so much I bake a few different things in one day because I just give myself one day a week to bake.So I have chosen one I think you’ll like that I’m gonna share this week.

This weeks recipe is brownie biscuits with caramel fraiche filling, this is a new recipe I found that everyone loves and have given the thumbs up so I hope you try it yourself.

All you need is:

  • 40g butter
  • 350g chocolate (i use Cadbury’s) roughly chopped
  • 1/4 cup plain flour
  • 2 large eggs
  • 1tsp vanilla extract
  • 1/4 Tsp baking powder
  • 2/3cup caster sugar

for the filling:

  • 200g white chocolate
  • 1/4 cup brown sugar
  • 125mil creme fraiche

Start by preheating your oven to 180℃ and line your baking trays with baking paper this recipe makes about 20 cookies.

Heat butter and 200gs of the chocolate in the microwave until melted, for about 20-30 seconds. don’t overheat. set to one side.

In a separate bowl combined the sift flour and baking powder and set this aside also.

Place the sugar, eggs, and vanilla in a bowl and beat with an electric whisk till pale and thick.

Next, fold the flour mix and chocolate mix into the egg mixture until combined. set this aside for 10 minutes to let the batter set.

then take a small spoon and drop 2tsp per cookie onto the baking tray, allow space for the cookie to spread ( about 5cm). Bake for 8-10 minutes or until shiny and crackly. allow them to cool completely on tray.

To make the filling just place all the ingredients into a saucepan, ( white chocolate, brown sugar, creme fraiche) over a low heat, stir until the chocolate has melted and the mixture is smooth. Transfer to a bowl and place in the fridge till completely cool. When the filling has cooled remove from fridge and beat with the electric whisk for about 2-4 minutes until light and fluffy.

spread the filling on the flat side of the cookie and place and one on top to make a sandwich and that’s it!!
