Baking Saturday: Rolo cupcakes with caramel icing
Hi all, Happy sweet Sunday!!Iv been baking again this week and I have another recipe to share. That last few weeks iv been baking a lot with my favorite sweets, incorporating them into my baking which I love to do and everyone seems to be enjoying them.I love trying new thing with baking its make it fun to experiment, I hope you enjoy this weeks recipe and try it yourself.
The Rolo cupcakes with caramel icing are so good and easy to make, there’s nothing complicated about it.
All you need is:
- 1½ cups plain flour
- 1 cup Rolo’s (chopped up)
- ½ cup caster sugar
- 1tbs baking powder
- 1 egg
- ¾ cup sour cream
- 1tsp vanilla
- ½tsp salt
- ½ cup unsalted butter
- ¼ cup milk
Caramel icing:
- 1½ cups icing sugar
- 1tbs milk
- 2tsp golden syrup
- 30g unsalted butter
You’re gonna start by preheating the oven at 180℃ and prepare your cupcake tray with cases, this recipe makes 12 cupcakes.
Start by sifting the flour into a large bowl with the Rolo pieces, sugar, baking powder, and salt.
In a sperate bowl beat the egg, sour cream, vanilla, butter and milk till combined.Next, add the wet mix to the dry mixture and fold together till just combined.
Spoon the cupcake mix into the cupcake trays and bake for 16-20 minutes till skewer inserted comes out clean.then leave to the side to cool.
For the icing beat together the icing sugar, milk, golden syrup, and unsalted butter until creamy.
To decorate the cupcakes I just used a knife to spread the icing on the cupcakes, then I put a halved Rolo sweet on top to finish.
