Baking Saturday: Malteser cupcakes
Hi all, sweet Sunday’s here again, I so look forward to Saturday when I can take over the kitchen to bake, I really just enjoy the process most of all it’s so relaxing for me. I hope you’re enjoying my favorite recipes.
This week is another new one, something fun! Malteser cupcakes with caramel icing!! there so good!!This recipe isn’t too complicated and pretty easy to follow.
All you need is:
- 1½ Cup plain flour
- 1 cup Maltesers (crushed)
- 12 whole Maltesers to decorate
- ½ Cup caster sugar
- 1 Tbs baking powder
- 1 egg
- ¾ Cup sour cream
- 1 tsp vanilla
- ½ Cup unsalted butter
- ¼ Cup Milk
- ½ tsp salt
For the caramel icing:
- 1½ Cups icing sugar
- 1 Tbs Milk
- 2 tsp golden syrup
- 30g Unsalted butter (room temp)
Start by preheating your oven to 180℃ and prepare cupcake tray with cases, this recipe makes 12 cupcakes.
Sift the flour into a large bowl with the crushed Maltesers, sugar, baking powder and salt.
In a separate bowl beat the egg, sour cream, vanilla, butter and milk till combined, then pour the wet mixture into the dry mixture and fold till just combined.
Pour the cupcake mixture into the cupcake tray and bake for 16-20 minutes or until a skewer inserted comes out clean. Leave the cupcakes on a wire rack to cool while you prepare the icing.
For the icing simples combined the icing sugar, milk, golden syrup and unsalted butter in a bowl and beat with electric beater until creamy.
To decorate I use a knife to spread the icing onto the cupcakes and place a single Malteser on top to finish!!
