Baking Saturday!! Raspberry cheesecake cupcakes
Happy sweet Sunday everyone!! So this week I tried out a new recipe iv been dying to try for a few weeks, finally got around to it yesterday and its HUGE HIT!! I really hope you enjoy it and try it!!
There raspberry cheesecake cupcakes, with white chocolate icing which I’m now addicted too!!lol The recipe isn’t overly complicated, it’s easy to follow, it’s another perfect summer desert.
All you need is:
- 150g butter (room temp)
- 3/4 cup caster sugar
- 2 eggs
- 150g white chocolate (melted)
- 300g (2cups) plain flour
- 1 tsp baking powder
- 1/3 cup sour cream
- 150g frozen raspberries
- fresh raspberries ( to decorate)
White chocolate icing:
- 250g cream cheese
- 100g butter ( room temp)
- 150g white chocolate
- 80g (1/2cup) icing sugar
Firstly preheat your oven to 160 ℃ and prepare cupcake tray with cupcake cases. this recipe makes 12 cupcakes.
Using an electric beater beat the butter and sugar till pale and creamy.Add the eggs one at a time and beat well after each.Add the melted white chocolate and beat until combined.
Next add the flour, baking powder and sour cream in alternating batches and stir till combined.Add the frozen raspberry to the mixture and fold till combined.
Divide the mixture into the cupcake cases and bake for 20minute then transfer to wire rack to cool.
To prepare the white chocolate icing first melt the white chocolate and leave to the side to cool. beat the cream cheese and butter till pale and creamy, add the white chocolate and beat till combined, then add the icing sugar and beat till combined.
I used a knife to spread the icing on the cupcake, I didn’t want it to look fancy just simple.I decorated the top with a slice of fresh raspberry.
